I grew up loving ube!! Back in the Philippines, purple yams are used in a wide variety of sweets like ice cream, cake, cupcakes, pies, cookies, flan, sticky rice, shakes, sweet breads, and pastries...the list is endless! Dare I say that ube might even beat chocolate in popularity among Filipinos?! 😮😅🤔
These Ube Pancakes are almost too pretty to eat --- fortunately, that has never stopped me or my dog before! 😂
Unlike regular pancakes, these are deliciously oil-free, cholesterol-free, cruelty-free and naturally sweetened by dates. They are also packed with nutrients as they are made of rolled oats, whole wheat and ube.
The good news doesn't end there. These mouth-watering pancakes are incredibly easy to make too! Simply throw in all the ingredients into the blender and let it do all the work for you. Batter can be ready for the griddle in as little as 5 minutes. Then just cook them up like you would regular pancakes.

NO UBE? No problem! You can substitute with regular yam. If you have neither on hand, you can try making some simple but yummy Banana Pancakes instead!
Ube Pancakes
Yield: 4 servings
Prep time: 5 mins
Cook time: 15 mins
Ingredients:
3/4 cup unsweetened nondairy milk
3/4 cup date water (may sub with water)
1/2 cup unsweetened applesauce
5 pitted dates (soaked preferred; see notes*)
3/4 cup rolled oats
3/4 cup whole wheat flour
1/2 tsp pink salt
1 tbsp baking powder
1 cup mashed purple yam (steamed until fork tender, peeled then mashed; see notes**)
Optional: 1/4-1/2 tsp ube extract (may sub with 1 tsp vanilla extract)
Directions:
Process all ingredients in a blender.
Cook on a nonstick flat pan or griddle, scooping 1/3 cup batter per pancake.
This batter does not bubble up quite as much as a regular pancake batter, so flip over as soon as you start to see bubbles.
Serve with maple syrup and fresh fruits!
Notes:
* Soaking the dates for at least a couple of hours will make it much easier on your blender or food processor.
** May sub with regular sweet potato.
