My son loves tofu scramble with Cheese in a Crunchwrap or with mashed pinto beans in a burrito. My husband loves it served in a plate with mashed pinto beans, salsa, avocados and crispy potatoes. I personally love it in Fried Rice. But today, I was in the mood for an open faced breakfast sandwich on avocado toast with red pepper flakes and LOTS of parsley!! 🤤
Simple Tofu Scramble
Yield: 4-5 servings
Prep Time: 10 mins
Cook Time: 15 mins
INGREDIENTS:
1 block extra firm tofu
Bell pepper, seeded and chopped
Kale, roughly chopped (may sub with other leafy greens)
2 tbsp nutritional yeast
1/2 tsp black salt
1 tsp tumeric
1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
Pinch of cumin powder
2 tsp soy sauce
1/2 tsp white pepper
Red pepper flakes
DIRECTIONS:
Dry sautee bell peppers on hot pan; let it caramelize for a few minutes then sweep to the outer edge of the pan.
Crumble tofu with your finger tips into the empty center of the pan.
Add in all other ingredients, except kale, on top of tofu.
Stir well, making to sure to fully coat tofu with spices and seasonings.
Add kale and stir again, then cover the pan and lower the heat. Cook x 5mins.
Serve warm with your favorite carbs!!
