Peach Cobbler

News getting darker by the day?? If you're stuck at home and need a break from the news of public hysteria over toilet paper shortage, instantly brighten your day with some Peach Cobbler!!


This beautiful dessert can be put together and ready to bake in just 15 mins! My little apprentice was delightfully surprised at how easy this was to make this!



This recipe was adapted from my favorite source of vegan recipes: Fat Free Vegan. I tweaked the recipe to use ingredients I have on hand, to adjust cake-to-fruit ratio, and to lessen the sugar and fat content.

As much as I love experimenting in the kitchen, I do NOT enjoy having a sink full of dirty bowls, measuring cups, pots and pans at the end of my cooking or baking session. That's why I always try to dirty as few things as possible in my recipes. This recipe only requires a bowl, a mixing spoon or spatula, a round baking dish, 3 measuring tools: tsp, 1/4 cup and 1/3 cup.

As a busy mom with a broken dish washer, I am VERY happy about that!!!


We start off the recipe by tossing our peaches with some ACV or lemon juice and a little bit of maple syrup in our baking dish, and we're done with the peaches!!!

We can now set the baking dish aside while we make our batter.


In a bowl, combine the dry ingredients. Add in the wet ingredients, mix to combine and done!! Pour the batter over the peaches and we are ready to pop it into the oven!! 😍👌


Simple, right?!?!? Now comes the only difficult part of this recipe: you MUST let it to cool off a bit before proceeding to inhale a slice!! I know it's going to look good and smell even better, but you have to observe restrain to avoid burning your mouth!


Tip: If you're on a time crunch or are simply too impatient to wait, a generous scoop of homemade nice cream on top will help cool off your slice a lot faster 😜👌😋

Peach Cobbler

Yield: 8 servings

Prep Time: 15 mins

Cook Time: 35 mins

 

INGREDIENTS:

  • 2 15oz-cans of organic sliced peaches; rinsed and drained (may use fresh peach)

  • 1 tsp apple cider vinegar or lemon juice

  • 2 tsp maple syrup

  • 1 1/4 cup flour (I used 3/4 whole wheat and 1/2 almond; see notes*)

  • 1/4 cup coconut sugar

  • 2 tbsp tapioca starch (may sub with cornstarch)

  • 1 tbsp baking powder

  • pinch of salt

  • 1/2 cup unsweetened nondairy milk

  • 2/3 cup date water (may sub with plain water or more plant milk)

  • 1 tsp of vanilla extract

DIRECTIONS:

  1. Place sliced peaches in a 9-in round baking dish.

  2. Add maple syrup and acv (or lemon juice), give it a quick stir to coat the peaches, then set aside.

  3. In a bowl, combine flour, sugar, starch, baking powder and salt.

  4. Then slowly stir in milk, date water and vanilla extract, making sure not to over mix.

  5. Pour batter over the peaches.

  6. Bake at 375 x 35 minutes.

  7. Allow to cool for at least 15 minutes before serving. Great with a scoop of homemade nice cream on top!!!! Enjoy!

Notes:

*You may use or experiment with whatever flours you prefer or have available. I choose to mix different flours for variety in nutrition and texture.
