I am obsessed with scones. I professed my LOVE for them in detail when I posted my recipe for Scones with White Chocolate Chips and Pistachios.
While I'm not a big fan of PB&J sandwiches, these PB&J Scones are simply to die for!
When I scored some juicy organic blueberries on sale at the market today, I got inspired to make some Blueberry Scones. And boy did they come out perfectly!
Then after seeing how vibrantly beautiful the blueberries looked in the scones, I knew just what to add to kick things up a notch: Peanut Butter Drizzle 🤤😋🤤
This recipe is EASY on the chef, on your wallet, on your heart and on your waistline! Traditional scones usually call for high-fat, high-cholesterol, high-calorie low-nutrient density ingredients. Not this time!
BLUEBERRY SCONES WITH PEANUT BUTTER DRIZZLE
Yield: 6 scones

INGREDIENTS Blueberry Scones:
1 cup traditional rolled oats
1/4 cup almond flour
1/2 cup whole wheat flour
1/2 tsp baking soda
pinch of pink salt
1/4 cup tahini
1/4 cup unsweetened applesauce
3 tbsp maple syrup
1 tsp vanilla extract
1/3 cup fresh blueberries (may use frozen)
Peanut Butter Drizzle (Optional):
1.5 tbsp peanut butter (unsweetened/unsalted)
2 tbsp date water (may sub with plain water, plant milk or maple syrup; see notes)*
1/2-1 tsp cinnamon
1-1.5 tbsp maple syrup (adjust to preferred sweetness)
Optional: 1/2 tsp vanilla extract
Optional: pinch of pink salt
DIRECTIONS
Blueberry Scones:
Mix oats, flours, baking soda and salt in a bowl.
Add in tahini, applesauce, maple syrup and vanilla extract. When ingredients are almost fully mixed, carefully fold in the blueberries to keep them intact.
For traditional triangle scones, transfer dough on a lightly floured surface and shape it into a flat circle. Cut up like a pizza into 6 triangles.
Transfer scones to baking sheet lined with parchment paper. Bake at 400 x 12-15 mins.
Allow to cool for at least 20 mins before glazing.
Peanut Butter Drizzle
Whisk all ingredients in a bowl and done! (If your peanut butter is thick, you may need to warm it up before mixing with the other ingredients and/or use more liquid.)
Notes:
* I soak a handful of dates in a jar with water overnight and use the naturally sweetened water in recipes.
