PB&J Parfait with Blueberry Chia Pudding and homemade Peanut Butter granola

Aren't parfaits just lovely??? They're almost too pretty to eat!! 😍💓🥰


But they're not just eye candy, these naturally-sweetened snacks actually taste like candy!! 😋


Unlike candy though, these are healthy and nutrient-dense --- another guilt-free indulgence that's easy to make!




The foodie in me finds it so enjoyable to dive into a parfait and feel the contrast in textures of the different components: the creamy pudding, the crunchy granola and the juicy perfectly ripened fresh fruits. It's like a party in your mouth! Yummm 🤤



I made PB&J Scones not too long ago that instantly became a new family favorite...and since I am well stocked on fresh blueberries, I thought why not make a parfait version!?!

My verdict?? ..so goooood!! Why did I wait so long???!!


It is hard to find store-bought granola that is oil-free and is not overloaded with processed sugar so I made my own! This Peanut Butter Granola recipe is quick, simple and requires only 6 ingredients!! It is yummy on it's own but is also great as a topping for different snacks like yogurt, pudding, nice cream, etc. It certainly paired deliciously with my Blueberry Chia Pudding in this PB&J Parfait!!


This is another convenient make-ahead breakfast for busy moms. Pack this gorgeous parfait to work or include it in your kids' lunch box! Easily customize your parfait by using or adding other toppings you like or have available!


PB&J Parfait

Yield: 2 servings

Prep Time: 20 mins

Cook Time: 25 mins


INGREDIENTS:


PB&J Parfait:

  • 2 cups Blueberry Chia Pudding

  • 2/3 cup Peanut Butter Granola (recipe below)

  • 1 Ripe banana, sliced

  • handful of fresh Blueberries (may sub with frozen)

Peanut Butter Granola:

  • 1.5 cup rolled oats

  • 3 tbsp pb (I used unsweetened/unsalted)

  • 2 tbsp unsweetened applesauce

  • 2.5 tbsp maple syrup

  • 1/2 tsp cinnamon

  • Pinch of salt

DIRECTIONS:


PB&J Parfait:

  1. Scoop about 1/2 cup of the Chia puddng into a bowl, jar, or glass.

  2. Add a few slices of bananas.

  3. Scoop a handful of the peanut butter granola on top of the bananas.

  4. Toss enough blueberries on top to completely cover the granola. Layering the fruits and granola this way prevents the granola from touching the pudding and keeps them crunchy!

  5. Repeat steps 1-4.

Peanut Butter Granola:

  1. If peanut butter is a bit thick, microwave for 20 secs to soften.

  2. Combine all ingredients in a bowl and mix well to make sure the oats are well coated.

  3. Transfer mixture on a baking sheet lined with parchment paper.

  4. Bake at 350 x 22-25mins.

  5. Allow to cool completely before eating or using in parfait.
