Looks like my lettuce wraps pass Blue's smell test! This adorable opportunist keeps me company in the kitchen because he knows that I'm clumsy and it's only a matter of time before I accidentally drop some of the crispy chickpeas on the floor and he gets to snack on them!
This recipe is super easy and simple, which is helpful and encouraging when you're trying to make better decisions in the kitchen. It's also very versatile and can be easily adjusted to whatever ingredients you prefer or have available!
Lettuce Wraps with Crispy Airfried Chickpeas and Chipotle Aioli
Yield: 6 wraps
Prep Time: 10mins
Cook Time: 15mins
INGREDIENTS
Crispy Chickpeas:
1 15.5 oz can of Chickpeas; drained and rinsed
Pink salt and black pepper.
Optional dry rub: garlic powder, onion powder, paprika
Chipotle aioli:
1/3 block silken tofu
1 tbsp adobo sauce
1-2 chipotle pepper, depending on preferred -level of spiciness
1 tsp acv or lime juice
1/2 tsp agave or coconut sugar
1 tsp each, garlic and onion powder
Water
DIRECTIONS:
Season chickpeas with salt and pepper. Toss in optional dry rub or whatever seasonings/spices you prefer.
Airfry at 400 x 15mins.
While chickpeas are in the airfryer, process all Chipotle aioli ingredients in a blender. Add water 1 tbsp at a time until you achieve desired consistency.
Fill up lettuce with crispy chickpeas, chipotle aioli, and fresh tomatoes. Feel free to add in any other fresh veggies or grains you like or have available such as avocados, cucumbers, quinoa, etc! Enjoy!
