As an LA resident who was also a huge LAKERS fan, I was happy to discover that I had the perfect yellow and purple leftover ingredients that allowed me to make this mambastic Lakers-Themed Fried RIce as a little tribute to KOBE on the day of his memorial. 💜💛💜

Lakers-Themed Fried Rice
Yield: 4 servings
Prep Time: 10 mins
Cook Time: 15 mins
Ingredients:
2 cups leftover tofu scramble
4-5 cups leftover steamed brown rice
5 garlic cloves, minced
8 oz of mushroom, sliced --- use as much or as little as you prefer/have
your choice of fresh/frozen veggies: I used thinly sliced purple cabbage + frozen green peas/sweet corn
3-4 tbsp soy sauce; depending on how much rice and veggies you're cooking
1 tsp ea: coconut sugar, garlic powder, onion powder
pink salt and pepper to taste
Directions:
Dry saute sliced mushroom, dont stir until edges start to brown.
Add in garlic, stir and cook for 1 min and lower heat.
Add soy sauce, coconut sugar, garlic powder and onion powder, cook until sugar dissolves.
Add fresh/frozen veggies, season with salt/pepper and cook x 5 mins.
Add rice, and stir well.
Add in tofu scramble, stir and recheck for seasoning. Enjoy!
