Dragon Fruit Nice Cream

It's been unbearably HOT in California, so here's another perfect summer treat that we can indulge in!! This Dragon Fruit Nice Cream is very easy to make, only uses 4-ingredients and quite literally tastes like a tropical vacation in a bowl!

This guilt-free and cruelty-free dessert is as festive as it is healthy. It hits the spot every time and satisfies my sweet tooth without the high caloric price tag that comes with most desserts!

Tip: If you don't have a high-powered blender and you want to enjoy your nice cream right away, you may need to add a bit of liquid to blend the frozen bananas; you could use either date water or unsweetened nondairy milk. I used a Vitamix and didn't need to add any liquid. My older Ninja blender does not need any added liquid either, but it certainly took longer to get everything smoothly processed. If you are making the nice cream ahead, I would encourage you to just let the chopped up frozen bananas to thaw a bit, instead of adding any liquid. The less liquid you add, the creamier the nice cream will be.

Tip: Nice creams are perfect as a make-ahead snack! Just store in an airtight container and keep frozen. When you are ready to enjoy your nice cream, take out of the freezer and allow to thaw for a few minutes, and it will taste just as great as the first time you whipped it up.

Serve your homemade nice cream with fresh fruits, cacao nibs or chocolate chips, nuts or seeds, and some homemade whipped cream if you're feeling fancy! You can of course, enjoy it by itself, but you could also deliciously serve it on top of freshly baked dessert like Blueberry Galette or Pound Cake.

Dragon Fruit Nice Cream

Yield: 6 scoops

Prep: 10 mins

 

Ingredients:

  • 3/4 cup chopped Dragon fruit

  • 4 overripe small bananas, chopped and frozen

  • 1/2 tsp vanilla powder (may sub with 1 tsp vanilla extract)

  • 8 dates (soaked preferred; see notes*)

Directions:

  1. Combine and process all nice cream ingredients in a blender. Tip: If you don't have a high-powered blender, you may need to add a few tablespoons of liquid to get the frozen bananas blended; see notes**

  2. Enjoy right away or, if making ahead, transfer to an air-tight container and store in the freezer.

  3. Serve with fresh fruits, cacao nibs or chocolate chips, nuts or seeds, and some homemade whipped cream if you're feeling fancy!

Notes:

* Soaking the dates for at least a couple of hours will make it much easier on your blender or food processor.

** The less liquid you add, the creamier the texture will be -- esp if you are making ahead or refreezing leftovers.
