Double Frosted Brownies

After being out of the country for 2 weeks, the dogs and I are officially and finally back in the kitchen!! As fun as our trip was, I am so thrilled to be back home. 😍 And what better way to celebrate my reunion with my kitchen than by making this decadent Double-Frosted Brownies!

As usual, I couldn't decide on the frosting -- too many options! When I have a hard time choosing, I typically ask my son, husband or whoever is around me for their preference. Not today! I was debating between vanilla and chocolate..but since I'm celebrating my return to the kitchen, I figured why choose one when I can indulge and make both!! 😋😍🤪

Fortunately, my brownie and frosting recipes are not just healthy, but are also soooo quick and easy to make that double frosting does not feel like a big deal at all!! Especially the frosting -- the blender literally does most of the work for you!


I topped my frosted brownies with cacao nibs but you can add lots of other yummy goodness like nuts and berries to diversify the flavors and textures.

Trying to cut back on calories or simply on a time-crunch?

No problem! Just make one frosting or omit frosting altogether! The brownies are absolutely delish by itself!


Double-frosted Brownies:

Yield: 9 square servings

Prep Time: 30 mins

Cook Time: 30 mins

 

INGREDIENTS:


Brownies:

  • 1/2 cup pure maple syrup

  • 2/3 cup unsweetened applesauce

  • 2 tbsp cashew butter

  • 1 tbsp flax meal

  • 1 tsp vanilla extract

  • 3/4 cup whole wheat flour

  • 1/4 cup unsweetened cocoa powder

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • pinch of salt


Chocolate Frosting: (Optional)

  • 1/4 block of extra firm tofu

  • 6 dates

  • 1 tbsp cashew butter

  • 2 tsp unsweetened cocoa powder

  • 1 tsp vanilla extract

  • 2 tbs date water, or more for thinner consistency; may sub with plain water

  • pinch of salt


Vanilla Frosting: (Optional)

  • 1/4 block of extra firm tofu

  • 1 tbsp cashew butter

  • 1-2 tbsp maple syrup

  • 1 tsp vanilla extract

DIRECTIONS:


Brownie:

  1. Combine dry ingredients and wet ingredients, separately.

  2. Pour wet ingredients into dry, and mix well to combine.

  3. Transfer the batter to an 8x8 baking dish lined with parchment paper.

  4. Bake at 350 x 30mins.

  5. Allow to cool completely before frosting.


Chocolate Frosting:

  1. Process all ingredients in a blender.

  2. Add date water for thinner consistency as needed. Add maple syrup for more sweetness, if desired.

  3. Pour over cooled brownies.

  4. Allow frosting to set in the fridge for about an hour or so before adding second frosting.


Vanilla Frosting:

  1. Process all ingredients in a blender.

  2. Add date water, if needed, for thinner consistency. Add maple syrup for more sweetness, if desired.

  3. Pour over brownies and top with cacao nibs, berries or nuts. Enjoy!
