Chocolate Peanut Butter Marble Banana Bread with 'Biscoff' Drizzle

I cannot buy BANANAS fast enough!!! We use them so much, we sometimes literally fight over them --- especially the overripe ones!! I use them to make nice cream, pancakes, waffles, and baked desserts. My husband uses them as his coffee creamer! (He plops it into his coffee and uses an immersion blender)




Much like how our dogs feel about Peanut Butter, we are bananas for bananas! 😁🍌😍🍌😋





My go-to Banana Bread recipe is by Forks Over Knives. The only thing I adjust when I make them are the quantities of the wet ingredients because 1/2 cup of maple syrup is a little too sweet for me --- and also a bit pricey, because pure organic maple syrup is not cheap. 😅


To change things up for my family, I kept those tweaks and kicked things up another notch to give Banana Bread a full-blown makeover!!! So if you have overripe bananas lying around, but don't want to make the same ol' banana bread, this is the recipe for you --- easy, affordable, healthy and delicious!!!! 🥰



If you are trying to cut back on fat intake or simply pressed for time, just skip the 'Biscoff" Drizzle and it will be just as yummy!! Here are pictures of my Chocolate Peanut Butter Marble Banana Bread without the Drizzle!




Chocolate Peanut Butter Marble Banana Bread with (optional) 'Biscoff' Drizzle

Yield: 8-10 slices

Prep Time: 15 mins

Cook Time: 45 mins

 

INGREDIENTS:


Chocolate Peanut Butter Marble Banana Bread:

  • 2 cups flour (I used 1 3/4 cup whole wheat and 1/4 cup oat; see notes) *

  • 3/4 teaspoon baking soda

  • pinch of salt

  • 2 medium sized overripe bananas, mashed

  • 1/4 cup pure maple syrup

  • 1/2 cup unsweetened applesauce

  • 1/4 cup unsweetened plant milk

  • 1.5 teaspoons pure vanilla extract.

  • 2.5 tbsp unsweetened cocoa powder

  • 2.5 tbsp pure peanut butter


"Biscoff" Drizzle: (Optional)

  • 2 tbsp peanut butter

  • 4 dates (soaked is ideal)

  • 1/4 cup date water (may sub with water or maple syrup)

  • 1/2 tsp vanilla extract

  • dash of ground cinnamon

  • Optional: 2 tsp maple syrup

DIRECTIONS:


Chocolate Peanut Butter Marble Banana Bread:

  1. Except for the cocoa powder and the peanut butter, combine dry ingredients and wet ingredients in separate bowls -- I personally prefer to combine my wet ingredients with unmashed bananas in a deep bowl and mix with an immersion blender.

  2. Pour wet ingredients into dry, and whisk.

  3. Pour out half of the batter back into the bowl you used for your wet ingredients.

  4. Add the cocoa powder into one of the bowls; whisk to combine. Add the peanut butter into the other bowl; whisk to combine.

  5. Taste the batters, and add more cocoa powder or peanut butter if desired.

  6. Pour the batters alternately into an 8x4 in loaf pan lined with parchment paper.

  7. Add toppings, if you'd like. I topped with peanuts and oatmeal on picture.

  8. Bake at 350 x 45mins. Allow to cool before adding the drizzle.


"Biscoff" Drizzle: (Optional)":

  1. Process all ingredients in a blender.

  2. Add more date water as needed to thin out the consistency.

  3. Add more maple syrup for more sweetness, if desired.


Notes:

*You may use whatever flour you prefer or have available. I choose to mix different flours for variety in nutrition and texture. For this recipe, I don't recommend using more than 1/4 cup of oat flour as the bread may come out gummy.
