As a mom, my mission in the kitchen is to make healthy eating taste like a cheat day. It's recipes like this that make it possible -- mission accomplished!! 👌😜

Chocolate Oatmeal

Yield: 4 servings

Prep Time: 5 mins

Cook Time: 20 mins

INGREDIENTS:

  • 1 cup traditional oats

  • 4 cups water

  • 3/4 cups date water (may sub with water + 1 tbsp of maple syrup)

  • 1/4 cup unsweetened plant milk

  • 1 tsp vanilla extract

  • 8 pitted dates (soaked preferred; see notes*)

  • 1 ripe banana

  • 3 tbsp cocoa powder

  • 1 tsp cinnamon

DIRECTIONS:

  1. Boil oatmeal in water, then cover the pot. Reduce to simmer x 10mins.

  2. While it cooks, blend the rest of the ingredients in a blender.

  3. Add blended mixture to pot and mix well; cook for at least 5 more minutes.

  4. Serve warm and top with your favorite fruits, nuts and/or seeds.

  5. Sprinkle with more cinnamon, if desired.

  6. Drizzle with more maple syrup, if desired. (We never find that we have to do this as the dates adequately sweeten the oatmeal for us.)

Notes:

* Soaking the dates for at least a couple of hours will make it much easier on your blender or food processor.
