Ceasar Salad

Contrary to popular belief, vegans don't just eat salads -- esp not this vegan!! 🙋♀️😅
I like my meals warm and super filling so I'm not a big salad eater. But on hot days or random rare occasions that I do crave for salad, I usually go for a Ceasar Salad with a side of puppy eyes. 🐶

When people eat salad in an effort to be healthier, their downfall is usually the salad dressing as most contain processed oils and are high in cholesterol.

My oil-free 5-minute Ceasar Dressing recipe will not only help you achieve your health goals, it also tastes amazing!!!
I drizzled it over a plate of greens (kale, spinach, lettuce), then topped with some pumpkin seeds, air-fried chickpeas, and, of course, some steamed purple yam --- which I clearly had to share with my adorable dogs! 😋🐶😜
Ceasar Salad:
Prep Time: 5 mins
INGREDIENTS:
greens (I used a mix of kale, spinach, and lettuce)
optional: pumpkin seeds (may sub with other seeds or nuts)
optional: steamed yams, on the side
Dressing:
1/3 block extra firm tofu
2/3 cups water
2 tbsp hemp seeds
1 tsp dijon mustard
1 tsp vegan Worcestershire
1 heaping tbsp nooch (nutritional yeast)
3 cloves garlic
juice from 1/2 lemon
1 tsp garlic powder
salt and pepper, to taste
DIRECTIONS:
Combine and process all dressing ingredients in a blender; season to taste.
Pour or drizzle over your greens. Add air-fried chickpeas, and sprinkle seeds (or nuts).
Enjoy with a side of steamed yams!
