I just love starting my day right with this beautiful immune-boosting Blueberry Chia Pudding Bowl with lots of fresh fruits!! Not only is it delicious, a bowl of this fills me up without leaving me bloated afterwards.😋🤤😋

The best part is you don't have to be a master chef to create this masterpiece! This Blueberry Chia Pudding recipe is super easy to make and requires very few ingredients! It's the perfect make-ahead breakfast too!! Convenient for busy moms with several mouths to feed early in the morning. Like most bowls, this is easy to customize and you can top with as many fruits, nuts and seeds as you'd like!
Blueberry Chia Pudding Bowl
Yield: 2 servings
Prep Time: 10 mins
Total Time: 90 mins
Ingredients:
1/3 cup chia seeds
1/3 cup blueberries (I used frozen; see notes)*
8 dates
2/3 cup date water (may sub with plain water)
2/3 cup unsweetened nondairy milk
optional: 1/2 tsp vanilla extract
optional: 1 tbsp maple syrup
Directions:
Process blueberries, dates, water, milk and vanilla extract in a blender.
In a bowl, pour mixture and stir in chia seeds with a spoon.
Let sit in the fridge for at least an hour, then stir again.
Check consistency and level of sweetness. Add 1-2 tbsp of water if mixture is too thick. Add maple syrup, as needed --- I've made batches when the blueberries and dates were so sweet that additional maple syrup were unnecessary.
Put bowl back in the fridge and allow to sit for at least 15 mins.
Stir again and serve! Top with fresh fruits, seeds, granola and/or nuts!
Notes:
*If using fresh blueberries, decrease water and milk to 1/2 cup each. Add more liquid as needed after you've let it sit in the fridge.
