Banana Waffles with Cinnamon Peanut Butter Drizzle

No better way to start your weekend than by having some Banana Waffles with Peanut Butter 'Biscoff' Drizzle, topped with lots of fresh berries and a side of Pink's adorable puppy eyes. 👀💕🐶
As usual, this sweet baby patiently waits to get some while she looks too cute just staring me down!

As if I'm not already obsessed with bananas, I came across an easy Banana Waffle recipe by Loving It Vegan that I just had to try!! The recipe required very minimal tweaking to make it compliant with Whole Food Plant Based No-Oil guidelines. I swapped out the all-purpose flour for healthier ones like whole wheat, oat and almond. I also lessened the nondairy milk to decrease fat content and used some date water instead, which adds a natural boost in sweetness. Lastly, I used unsweetened applesauce instead of oil. It's so awesome to find an easy recipe from a trusted source that doesn't require sorcery to figure out how adjust to it to my dietary preference. Score!! 😍
Banana Waffles with Cinnamon Peanut Butter Drizzle
Yeild: 8 waffles
Prep Time: 10mins
Cook Time: 30mins
INGREDIENTS:
Banana Waffles:
3/4 cup whole wheat flour* (see notes below)
1/2 cup oat and/or almond flour* (see notes below)
2 tsp baking powder
1/4 tsp pink salt
1 cup unsweetened nondairy milk
1/4 cup date water (sub with more nondairy milk)
2 very ripe bananas
1 tbsp unsweetened applesauce
1 tsp vanilla extract
Cinnamon Peanut Butter Drizzle:
1 tbsp peanut butter
2 dates (soaked is ideal)
1/4 cup date water (sub with plain water or nondairy milk)
1/2 tsp vanilla extract
dash of ground cinnamon
DIRECTIONS:
Banana Waffles:
Mix all dry ingredient in a bowl.
In a separate bowl, mix all wet ingredients with mashed bananas -- I prefer using an immersion blender to mash bananas while simultaneously mixing all wet ingredients and it produces a smoother batter, but hand-mashing should work too.
Combine wet and dry ingredients, and mix well.
Scoop 1/2 cup of the batter at a time onto the waffle maker, and adjust cooking time to your waffle maker. This batter does not require the use of cooking spray on my nonstick waffle maker --- the only time it sticks is if its not cooked through yet.
Cinnamon Peanut Butter Drizzle
Process all ingredients in a small blender.
Drizzle on waffles and add whatever toppings you want!
Notes:
*You may use whatever flour you prefer or have available. I choose to mix different flours for variety in nutrition and texture.
