In case you didn't celebrate National Ice Cream Day yesterday, do it today!! 🍦 My favorite way of using overripe bananas during summer is homemade Nice Cream! 😍😋😍
After working a long shift on my birthday last week, I whipped up this super easy, yet incredibly indulgent treat!! As much as I love making cakes for special occasions (or no reason at all!), I was simply too tired to bake when I got home from work. This banana split was the perfect birthday treat, especially right now when it is often too hot to bake!
This fool-proof recipe for the yummiest Nice Creams requires only 4-ingredients!! Super easy to make too because the blender does all the work for you! 😉
Tip: If you don't have a high-powered blender, you may need to add a bit of liquid to blend the frozen bananas; I recommend using either date water or unsweetened nondairy milk. I used a Vitamix (a generous birthday gift from my beloved sister 💚) and didn't need to add any liquid. My older Ninja blender does not need any added liquid either, but it certainly took longer to get everything smoothly processed.
There are limitless ways to enjoy your nice cream!! You can devour it by itself, or deliciously serve it on top of freshly baked dessert like Blueberry Galette or Pound Cake (as pictured below). You can enjoy it with fresh berries and a dollop of homemade Whipped Cream, and/or sprinkle some nuts, hemp seeds, nondairy chocolate chips or cacao nibs. You can even build a fabulous nice cream cake if you want!!
Tip: Nice creams are perfect as a make-ahead snack! Just store in an airtight container and keep frozen. When you are ready to enjoy your nice cream, take out of the freezer and allow to thaw for a few minutes, and it will taste just as great as the first time you whipped it up.
Since I usually make ahead my nice cream (esp chocolate, my favorite!), it only takes me under 10mins to put together Banana Splits!
Banana Split
Prep: 10-30 mins
INGREDIENTS:
1 just ripe banana, cut in half lengthwise
homemade whipped cream
(Optional) toppings: fresh berries, cacao nibs, nuts and seeds
Chocolate:
4 bananas, chopped then frozen
1/2 tsp vanilla powder (may sub 1 tsp vanilla extract)
2.5 tbsp unsweetened cocoa powder
6 dates (soaked preferred; see notes*)
Strawberry:
2 medium overripe bananas
1/2 tsp vanilla powder (may sub 1 tsp vanilla extract)
4 dates (soaked preferred; see notes*)
1/3 cup pureed fresh strawberries
Directions:
Combine and process all Chocolate nice cream ingredients in a blender. Tip: If you don't have a high-powered blender, you may need to add a few tablespoons of liquid to get the frozen bananas blended; see notes**
Transfer nice cream to an air-tight container, and store in the freezer. Rinse off blender.
Repeat steps 1 & 2 for Strawberry nice cream.
Gather and prepare other banana split ingredients.
Take out Chocolate and Strawberry nice cream from the freezer, and proceed to deliciously assemble your Banana Split! Enjoy!
Notes:
* Soaking the dates for at least a couple of hours will make it much easier on your blender or food processor.
** The less liquid you add, the creamier the texture will be -- esp if you are making ahead or refreezing leftovers.
