For his first lesson, we made this yummy, healthy and super EASY recipe for Banana Pancakes with Chocolate Sauce!! 🥞😋🍌
Simply throw in all the pancake ingredients into a blender and you're ready to cook!! It literally takes 5 minutes to put this batter together! How easy is that?!
These fluffy pancakes are naturally and deliciously sweetened by dates and bananas. No added sugar needed!
They also cook nicely without sticking to the pain!! No processed oils or cooking spray required!
While your pancakes are cooking, you can get started on the Chocolate Sauce -- another unbelievably quick and easy recipe!
Tip: If you plan to multitask like I usually have to, make sure to keep a close eye on your pancakes to avoid burning them!!
After you transfer the pancake batter to a bowl, throw in all the chocolate sauce ingredients into the same blender-- don't bother rinsing it off. Once smooth and fully combined, transfer the chocolate mixture to a sauce pan and simmer until it thickens. The chocolate sauce also takes just 5 minutes!!
This chocolate sauce is multi-purpose! It works great as a dip for fresh fruits, as base spread for tortilla roll-ups or as sauce or drizzle for desserts! Enjoy!
Banana Pancakes with Chocolate sauce:
Yield: 12 pancakes
Prep Time: 10 mins
Cook Time: 15 mins
INGREDIENTS:
Banana Pancakes:
1 cup whole wheat flour
1/2 cup rolled oats
1/2 cup date water (may sub with more nondairy milk)
3/4 cup unsweetened nondairy milk
3 tbsp unsweetened applesauce
4 pitted dates
2 medium overripe bananas
1 tbsp baking powder
1 tsp vanilla extract
1.5 tsp cinnamon
pinch of salt
Chocolate sauce recipe:
1/2 cup date water (may sub with water)
1/2 cup plant milk
1/2 tsp vanilla extract
2 tbsp cocoa powder
4 dates
2 tsp cornstarch
optional: 1 tbsp maple syrup
DIRECTIONS:
Banana Pancakes:
Process all ingredients in a blender.
Cook on a nonstick flat pan, scoop 1/4 cup of the batter per pancake.
Flip over when you start to see bubbles.
Serve warm with the chocolate sauce and fruits!
Chocolate Sauce:
Combine all ingredients in a blender.
Transfer mixture to a sauce pan and simmer until it thickens; stir frequently to avoid burning sauce.
Pour on a stack of pancakes and enjoy!
