Banana Fries

Having two Bicolano parents, I grew up going on long and frequent vacations to Bicol. Luckily for me, there are lots of things to be excited about in Bicol, aside from seeing family.

They have the best beaches, scenic views and amazing food there!!! One of my favorite Bicol delicacies is Maruya, which is the local take on banana fritters.


Traditionally, they are made by heavily coating plantains in an egg and milk batter, then tossing them in a deep fryer until crispy.


In my effort to recreate this favorite snack from my childhood, I came up with Banana Fries!

My Airfried plantains taste like a cross between Maruya and Banana-Q. They are sooooo yummy!!!


Not only do these Banana Fries totally hit the spot, they only require 5 ingredients!!! They are very easy to make!! And since we are doing away with deep frying, clean up is also a lot easier!! 👌


More importantly, they are light and healthy. You can enjoy all the crispy goodness on the outside without any of the grease or cholesterol in your inside!! 😜🍌😍


These inhalable snacks are perfect for kids ages 2-200 and are easy to pack in your kid's (or adult's) lunch box!!!



Banana Fries

Yield: 12 pieces

Prep Time: 15 mins

Cook Time: 10mins

 

INGREDIENTS:


  • 6 ripe plantains, halved lengthwise


Wet coat:

  • 1/2 cup Aquafaba

  • 1/2 tsp vanilla extract


Dry coat:

  • 1/2 cup almond flour

  • 2 tbsp coconut sugar


DIRECTIONS:


  1. Mix your wet ingredients and dry ingredients in separate bowls.

  2. Dip plantains in aquafaba mixture apply wet coat.

  3. Then dip in flour mixture to apply dry coat.

  4. Airfry at 380 x 10mins. Enjoy!!!
