Aquafaba Whipped Cream

Super easy, super yummy and super fluffy homemade Aquafaba Whipped Cream!! 😍

I have made aquafaba whipped cream many times in many different ways. Hopefully, my findings can help you navigate the world of aquafaba fluff! 😁

WHAT is Aquafaba?

Aquafaba is the thick liquid that legumes are cooked in. While you can use homemade, I tend to use the liquid that comes with canned beans out of convenience; usually from canned chickpeas. Because aquafaba is rich in protein, it is commonly used as an egg white replacement in recipes.

HOW do we turn it into whipped cream?

  • The fluff is created by whipping the aquafaba with a hand mixer or in a stand mixer with the whisk attachment on. It takes about 5-8 mins to whip it up in a stand mixer, and up to about 10-12 mins with a hand mixer.

Tip: I do not recommend trying to whip it by hand with a whisk as it would take way too

long and would be too exhausting.

  • Adding cream of tartar, lemon juice or apple cider vinegar helps stabilize it and hold up its foamy peaks.

WHICH sweetener to use?

  • Coconut Sugar is obviously the healthier option and adequately sweetens the whipped cream. However, it doesn't allow for very stiff peaks and and doesn't stay fluffy for too long. It would be ideal to whip this up right before you are ready to serve.

  • Organic Powdered Sugar produces a fluffier whipped cream that holds up it's peaks for much longer. Trade off is it's obviously processed and not nutritious at all. If you decide that this is an indulgence you will allow yourself as a rare treat, always get organic (esp if you are US-based) to make sure that the sugar has not been filtered with bone char.


Aquafaba Whipped Cream

Yield: about 2.5 cups of fluff

Prep: 10-15 mins


Ingredients:

  • 1/4 cup aquafaba (from canned chickpeas)

  • 1 heaping tsp of coconut sugar (or 1 tsp of organic powdered sugar)

  • 1/2 tsp vanilla powder (or 1 tsp vanilla extract)

  • (optional) 1/8 tsp cream of tartar

Directions:

  1. Whip aquafaba and cream of tartar, if using, in a bowl using a hand mixer or a stand mixer with the whisk attachment on.

  2. Once soft peaks start to form, slowly add in the sugar while continuing to whip.

  3. Once semi-stiff peaks are achieved, add in vanila powder and continue to whip for 3-5 more minutes.

  4. Enjoy with fresh fruits or atop warm pastry! 😋
